Enrico’s training in Michelin starred restaurants in Rome and Florence brings a sophisticated edge to his dishes. A farmer at heart, his food celebrates the simplicity of the amazing fresh ingredients that are available in Italy throughout the year. His approach offers a surprising and exciting twist to the culinary heritage of the region and its best known dishes, from Pappa al Pomodoro to Bistecca Fiorentina.
